Butternut Squash Soup

Making it myself... should say making it up!



Butternut squash... I cubed up two fresh and I have a package of frozen too

a package of cubed sweet potato

I figure I'll cut up a bunch of carrots

slice up an onion

have a package of butternut squash puree too

Some regular little potatoes... figured that would help me give it some "consistency"

plan to use some half/half (instead of heavy cream! LOL)

Beef broth instead of chicken or veggie- I thought that might give it a little more flavor

I figure some curry powder and some ginger would be yummy...



What else do you think? What other spices?



Figured I would throw it all in the crock pot tomorrow AM... then tomorrow night before I serve it I can "mash" it all up...



Cheese, crackers, crusty bread... and this soup... white wine... this makes me happy... even if I end up eating alone... it will be nice... I will freeze what I don't eat.



Tips? Ideas? what spices do I need to add...

I have made it before but kept it very simple: butternut squash, chicken broth, salt, a bit of brown sugar, onion, cream. I think that was it.

Yours sounds good!

I think so La!

I do a winter veggie soup that is broth, leeks, onion, carrots, potato (golden yukon), sweet potatoes and sometimes parsnips. Then I puree it and add a bit of cream. Its so delish! I only add salt to it... mostly because I like it that way. The basis for it was a potato leek soup recipe.

Oh and sometimes I add shredded chicken for protein.

OOH that sounds yummy!

I decided to roast the squash, onions and potatoes first (not the frozen squash of course! LOL) I figure the roasting will give it a nicer flavor than without.

I am going to finish roasting it... throw it in the crock pot and walk up to Target and get some fruit for mini-pies! LOL

I htink it needs something... not sure what? Maybe some OJ? Or sugar? It tastes kind of like splut pea soup! LOL not really but... Maybe the spices I added were not enough for the whole pot...

Ideas?
