Monday Dinner? Empty Monday Dinner?

Okay, I'm starving. Its 8pm. And I just really don't feel like getting up off the couch and making dinner.

I defrosted ground chicken, and I was gonna make a quick chicken chili...but I need to get my ass off the couch and start making it.

I used ground chicken to make stuffed peppers yesterday. I didn't love them but they were super healthy and low carb so DH was happy with them.

I made a batch of veggie beef soup yesterday that I ate tonight. I also made black eye peas so I will eat those and brown jasmine rise tomorrow Smile

I like when I made them with stuffed peppers....but I dont like the texture of peppers, so I dont eat them lol...But I really like the flavor they give.

I made hamburgers and DH actually grilled. Its one of the only ways I can get him to cook. lol

I am going to try to make more real people food (vs prepackaged frozen stuff) Im just usually so beat by the time i get home its much easier to just nuke something.

thats absolutely true Mara.
That was one of my "since I'm unemployed" I try really really hard to make food every night. but when I was working---hell no that barely happened once or twice a week.

That is why I cooked three things on Sunday... stuffed peppers, black eyed peas for later, and veggie beef soup for later.

crock pot!!!

i enlisted my MIL to cook while she was here in september so now I can grab a meal from the freezer on nights when i have class or i'm just exhausted. i'll do it again when she's here next month.

i also plan ahead for quick meals (a la Rachael Ray) so that I can get dinner on the table in 30 minutes or less. it takes some planning and coordination, but i have to feed this boy a real meal every night -- no cereal for him!

Its the planning I just have to do Tess. I agree, it can be done Smile We even just do a roasted chicken from publix and veggies some times.

What do you put in your stuffed peppers K... or what do you suggest. These were just okay. I added sauteed mushrooms, garlic and a bit of dried onion. Then topped with tomato sauce. it was okay but I didn't love it.

Bree, I put cracked black pepper in mine instead of garlic... less "heavy."

I'm eating cereal now... crunch.

Bree -- I make the chicken like I would a meat sauce for spaghetti almost...I cook the tomato in with the chicken and onion and garlic...sometimes I add the tops of the pepper into the sauce as well. But less tomato sauce than if you were actually making spaghetti, like half tomato sauce and half chicken broth, and then let that simmer for a little bit

Kacie and I went to Outback for dinner. She hadn't ever been there and I hadn't been there in a few years. Now I remember why, they have great service, but the food isn't really that good.

I had some shrimp pasta stuff. It was OK and it was only 12 points, so that made me happy!
