Sweet Blessings Squash
2 T salted butter, melted
1 lb sweet potatoes cut into 1-inch pieces
1 lb acorn squash, peeled, seeded & cut into 1 inch pieces
1 large onion, chopped (recipe says optional, family all agreed it's a MUST)
1/3 cup dried cranberries
1 T honey
1 tsp granulated sugar
1 tsp ground cinnamon (although I used more)
Preheat oven to 375 degrees. Pour the melted butter into a 13x9 pan. Add the sweet potatoes & cover pan with foil. Bake for 15 minutes.
Remove foil and add squash, onion, cranberries, honey, sugar and cinnamon. Stir to combine. Bake uncovered for 35 to 40 minutes or until veggies are tender.
