Chicken Enchilada Soup

It is seriously awesome. I changed it a bit so here is my version but I am sure both are good! I left out the tortillas so mine is more of a enchilada soup The one on the site is for the slow cooker! I did mine on the stove because it was faster.
Ingredients
2.5-3.5 lbs Split chicken breasts ON THE bone
2 cans rotel tomatoes (get mild if you want, I used original)
1 (10 ounce) can enchilada sauce
1 medium onion, diced small
4-6 cups water
1 teaspoon cumin
1 teaspoon chili powder
garlic salt & black pepper to taste
2 cans sweet corn
OPTIONAL add-ins
Canned black beans
Reduced fat sour cream
Avocado
Lime slices/juice
Place chicken breasts in a large stock pan and cover with water. Simmer for about 1 hour, or until chicken is done and beginning to fall off the bone. Place breasts on a plate to cool.
Add all the remaining ingredients EXCEPT the add-ins to the pot and simmer while chicken cools.
Shred and debone the chicken meat. Add back to the pot. Continue to simmer soup, covered, until the onions are soft. Taste and add more water or more seasoning if needed.
Serve with any of the toppings listed. DH had his with beans and sour cream, while I prefer a squeeze of lemon juice, a bit of sour cream and lots of avocado chunks.

This is one of my dh all time favorite soups while we are in Mexico. we add the fried tortilla strips as a garnish also.

I have several recipes for chicken tortilla soup, as we love to order this soup at Jason's Deli, but I can never seem to find one that I am totally happy with-gonna give this one a whirl! TFS
